Creamy Lemon Garlic Chicken

INGREDIENTS FOR CHICKEN:
Chicken Breast ( I buy a pack of 2, then slice them in half)
1 cup flour
2 tsp salt
2 tsp adobo ( for extra flavor)
1 tsp thyme
1 tsp paprika
INGREDIENTS FOR SAUCE:
2 tbsp flour
1/2 yellow onion (chopped thin)
3-4 baby bella mushrooms (sliced) or white
3 tbsp minced garlic
3/4 cup chicken broth
1/2 cup heavy cream ( can use half and half)
1/4 cup lemon juice-or 1 lemon squeezed
2 tsp thyme
1/2 cup shredded mozzarella cheese pleaseeee
salt and pepper to taste, if you like flavor.
DIRECTIONS:
First let's cook the chicken. Mix the flour, salt, adobo, thyme and paprika in bowl for dredging the chicken. Slice your chicken breasts in half. Take the chicken you have sliced in half and one by one coat evenly with flour mixture.
Heat skillet to medium heat. Add cooking oil (vegetable, olive, canola, peanut, whatever have) to pan. You want to evenly coat bottom of pan. Let heat about 4 minutes. Add chicken, cook until golden brown on both sides, about 5-6 minutes on each side.
Set chicken aside once cooked. Clean pan if too many burnt pieces are remaining.
Add oil, about 2 tbsp to pan. Turn heat to medium low Add chopped onion, let cook until almost translucent, about 3-4 minutes. Then add minced garlic and thyme. Cook another 1-2 minutes. Add mushrooms, cook another 4 minutes or until mushrooms have wilted.
Add in flour, slowly! Mixing as you add. I find it helps if you add just a little more oil before doing this.
Once flour is mixed, slowly add in chicken broth and heavy cream. Add shredded cheese and mix until melted. Add back the chicken. Let simmer for about 10 minutes. No lid.
Add extra cheese on top and then serve when melted!
