Creamy Steak Tip Gnocchi

Oh boy! What a treat to make for everyone or just yourself. Decadent, sophisticated and creamy. If you have never had Gnocchi, which surprisingly, after making this, more people than I thought had never had it!
Gnocchi is very versatile and so easy to cook, especially when you get the already made package from the store. Which is what I did for this recipe. The real flavor is in this cream sauce. And I'm a little obsessed with adding in some dijon mustard, it adds such a subtle change to the flavor.
INGREDIENTS:

1lb stew meat or sirlion tips
4 sprigs thyme
1 packet beef seasoning
1 cup red cooking wine
1 cup water
1lb package gnocchi
1 shallot, chopped
1 sweet onion, chopped
5 baby portabellas, sliced
2 tbsps butter
2 tbsps flour
1 cup heavy cream
1/2 cup shredded parmesan
2 tbsp dijon mustard
Salt and pepper to taste
DIRECTIONS:
Let's start by cooking the meat. In large pot add cooking oils and sear your beef tips on high heat. Once brown on all sides add in wine, water, thyme, beef seasoning. Bring to a boil and turn heat to medium and cover while making sauce. Should cook for about an hour.
In medium sauce on medium heat add cooking oil. Add onion and shallot, let cook for 5 minutes or until onion is translucent. Add in mushrooms, continue cooking for another 4 minutes.
Move over onions, shallots and mushrooms to one side of pan and add in butter to the other side. Let butter melt, then add in flour. Whisk flour and butter together until thickened.
Combine flour and butter mixture with onions, shallots and mushrooms.
Add 1/4 cup of broth from meat to your sauce pan. Mix well. Add in heavy cream. Mix well.
Add parmesan and turn heat to low. Only allowing the sauce to simmer.
Add dijon mustard.
In another large pot bring water to boil and cook gnocchi, only about 2 minutes or until they rise to the top.
Drain and add to sauce. Drain meat and add to sauce. Combine and enjoy!!
