1 lb (454 g) medium shell pasta
1 tablespoon (15 ml) oil from sun-dried tomatoes
3 cloves garlic, minced
1/4 onion, chopped
1/4 cup (35 g) sun-dried tomatoes, chopped
4 oz (113 g) tomato paste
2 1/2 cups (600 ml) heavy cream
1 cup (30 g) fresh spinach
1 cup (113 g) shredded mozzarella cheese
1/2 cup (50 g) grated parmesan cheese
Seasonings (for sauce):
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and pepper to taste

1. Cook the Pasta
Bring a large pot of salted water to a boil and cook the shell pasta according to package directions.Drain and set aside.
2. Cook the Sausage
In a large oven-safe skillet or cast iron pan, heat the sun-dried tomato oil over medium heat.Add the Italian sausage and cook until browned and fully cooked, breaking it up as it cooks.Remove from the pan and set aside.
3. Build the Flavor Base
In the same pan, add chopped onion, garlic, and sun-dried tomatoes.Sauté for about 5 minutes until softened and fragrant.
Add tomato paste and cook for 2 minutes, stirring continuously.
