Caramelized Peach Fritters

Ingredients

Caramelized Peaches

  • 2 ripe peaches, diced

  • 2 tbsp butter

  • 2 tbsp sugar

  • 1/4 tsp cinnamon

  • 3/4 tsp lemon juice

  • 1/8 tsp salt

Fritter Batter

  • 1 1/4 cups all-purpose flour (155 g)

  • 1 tbsp sugar

  • 2 tsp baking powder

  • 1/2 tsp ground ginger

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp salt

  • 2 eggs

  • 1/3 cup milk (80 ml)

  • 1 tsp vanilla extract

  • 1 tsp melted butter

  • 1 cup caramelized peaches

Glaze

  • Reserved juices from peaches

  • 1 1/4 cups powdered sugar (150 g)

  • 1/2 tsp vanilla extract

  • 2–2 1/2 tbsp milk (adjust as needed)

Instructions

1. Make the Caramelized Peaches

In a medium pan, melt butter over medium heat. Add diced peaches, sugar, cinnamon, lemon juice, and salt.

Bring to a gentle simmer and cook for about 5 minutes, until peaches are soft and caramelized.

Remove from heat, separate the peaches from the liquid, and allow to cool. Reserve the liquid for the glaze.

2. Prepare the Batter

In a large bowl, whisk together flour, sugar, baking powder, ginger, cinnamon, nutmeg, and salt.

In another bowl, mix eggs, milk, vanilla, and melted butter.

Combine wet and dry ingredients until just mixed, then gently fold in 1 cup of the caramelized peaches.

3. Fry the Fritters

In a deep pot, heat 4–5 cups of oil to 375°F (190°C).

Scoop about 1/3 cup of batter per fritter and carefully drop into the oil.

Fry for about 3 minutes per side, or until deep golden brown and cooked through.

Transfer to a paper towel-lined plate or wire rack.

4. Make the Glaze

In a bowl, whisk together powdered sugar, vanilla, and reserved peach juices.

Add milk gradually until you reach your desired glaze consistency.

5. Finish & Serve

Drizzle the glaze generously over warm fritters and top with extra caramelized peaches if desired.

Serve immediately for the best texture and flavor.
