Ingredients

Crispy Fried Chicken

  • 1.5 lb chicken tenders (680 g), tendon removed and patted dry

  • 1 1/2 cups buttermilk (360 ml)

  • 1 1/2 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • Dash of black pepper

Breading

  • 1 1/2 cups all-purpose flour (180 g)

  • 2 1/2 tbsp cornstarch

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • 1 tsp paprika

  • 2 tbsp buttermilk

Chipotle Sour Cream

  • 1/2 cup sour cream (120 g)

  • 1–2 tbsp chipotle peppers in adobo, diced

  • 1–2 tbsp milk (to thin)

  • Salt to taste

Fresh Salsa

  • Tomatoes, diced

  • Red onion, diced

  • Fresh cilantro, chopped

  • Lime juice

  • Salt

Assembly

  • 6 flour tortillas

  • 2 cups shredded mozzarella cheese (200 g)

  • Lettuce


Instructions


1. Marinate the Chicken

In a bowl, combine chicken tenders with buttermilk, salt, garlic powder, onion powder, smoked paprika, and pepper. Let marinate for at least 15–30 minutes.

2. Prepare the Breading

In a separate bowl, mix flour, cornstarch, salt, garlic powder, onion powder, smoked paprika, and paprika. Add 2 tablespoons of buttermilk and lightly mix to create small clumps for extra crispiness.

3. Fry the Chicken

Heat oil in a pan, enough to come about halfway up the chicken.

Remove chicken from marinade and coat well in the breading. Let rest for 5 minutes before frying.

Fry each piece until golden brown and fully cooked through. Transfer to a paper towel-lined plate.

4. Make the Sauces

In one bowl, mix together all salsa ingredients to taste.

In another bowl, combine sour cream, chipotles, milk, and salt. Mix until smooth and creamy.

5. Assemble the Wraps

Lay a tortilla flat and cut a slit halfway up from the bottom center.

Layer ingredients into each section:

  • Bottom left: lettuce

  • Top left: crispy chicken

  • Top right: salsa

  • Bottom right: chipotle sour cream + cheese

Fold each section over itself to form a layered wrap.

6. Toast the Wraps

Heat a clean pan over medium heat. Place folded wraps in the pan and cook until golden brown on both sides and the cheese is melted.


Tips & Notes

  • Pat chicken dry first so the marinade sticks properly

  • Letting the coated chicken rest helps the breading stay intact while frying

  • Add extra chipotle for more heat or keep it mild

  • Don’t overfill wraps so they fold easily
