INGREDIENTS:

2 cups Tapioca Flour

1 cup whole milk

1/2 vegetable oil

1 tsp salt

2 eggs ( room temperature)

1/2 cup blended shredded cheese

1/2 cup shredded parmesan


DIRECTIONS:

  1. Preheat oven to 400 degrees.

  2. In a blender, place all the ingredients and blend just until all ingredients are well mixed and the cheese is in small pieces.

  3. Pour batter into mini muffin pans.

  4. Bake in the oven for 15-20 minutes or until golden brown.

  5. Serve warm!
