1/2 cup (40 g) roughly chopped Biscoff cookies (about 5 cookies)

1/4 teaspoon salt

1/4 cup (65 g) unsalted butter, melted

1 1/2 cups (380 g) mashed ripe bananas (3–4 bananas)

1/2 cup (100 g) packed light brown sugar

1/2 cup (100 g) granulated sugar

1/2 cup (112 g) unsalted butter, browned

2 large eggs

1 teaspoon vanilla extract

1/2 cup (120 g) sour cream or Greek yogurt1

1/3 cups (172 g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup (140 g) mini chocolate chips

1/4 cup melted cookie butter


Instructions

1. Make the Streusel

In a bowl, combine flour, chopped Biscoff cookies, brown sugar, granulated sugar, cinnamon, and salt. Add melted butter and mix until crumbly. Set aside.

2. Brown the Butter

In a saucepan over medium heat, melt butter and continue cooking until golden brown and fragrant. Remove from heat and let cool slightly.
