One of my favorites baking recipes to date! This recipe really just came out of no where, I was craving something sweet, but needed to make something for breakfast. I became inspired by a few things I saw on social media that morning. Also, it looks very much like Spring, doesn't it?
Caramelized Crunch on the top, and delightfully soft on the inside. Slice them open hot and spread some butter on top. Eat with the perfect cup of coffee. Let's make...
INGREDIENTS for the batter:
1 ½ cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
1/3 cup vegetable oil
1 egg
1/3 cup milk, or more as needed
1 cup fresh blueberries
2 tbsp blueberry jam/jelly
For the topping:
1/3 cup brown sugar
2 tbsp melted butter
2 tsp flour
*about 8 muffins
DIRECTIONS:
Start by mixing all the dry ingredients for the batter. Flour, sugar, baking powder and salt.
In a 1 cup measuring cup, add oil and egg. Mix until combined. Then add milk about 1/3 cup until the mixture reaches the top or the 1 cup mark.
Pour wet ingredients into dry and mix well.
Add blueberries and combine, then add blueberry jam/jelly then combine.

Line muffin cups or grease them, then add the batter. Leave room for the topping.
Preheat oven to 400 degrees.
In small bowl mix brown sugar, melted butter and flour until combined. Drizzle over muffins.
Bake muffins at 400 degrees for 7 minutes, then reduce temperature to 350 degrees and bake for an additional 20 minutes. (add more time if needed).
Enjoy!!
