Chewy Double Chocolate Kit-Kat Cookies


My first experience making these delicious cookies, i experimented a few times and they are so good! Chewy, big, deep chocolate flavor, amazing after dinner or just whenever you that chocolate fix. Oh, and super simple to make.

My husband isn't a fan of cookies, so I don't make them too often. But, he enjoyed these and of course so did I. I might have even gave a bite to our 1 year-old... So, let's get started.



INGREDIENTS:

  • 2 sticks melted butter

  • 1 cup light brown sugar packed

  • 1 cup granulated sugar

  • 2 large eggs room temperature

  • 2 teaspoons vanilla extract

  • 2 cups all purpose flour

  • 3/4 cup cocoa powder natural

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 cups chocolate chips semi-sweet + a little extra for topping

  • 1 kit-kat bar chopped

DIRECTIONS:

  1. Melt the unsalted butter in a medium-sized mixing bowl.

  2. Once the butter is melted, add in the cocoa powder and stir it until it’s smooth and combined.

  3. Then, add in the melted butter and cocoa powder mixture, brown sugar, and white sugar. I used a hand mixer, but you can use spatula or even a stand mixer.

  4. Mix the ingredients on medium speed for about 1-2 minutes or until fluffy. If using a spatula who will need to put in some work and mix until light and fluffy. Alternate between whisk and spatula.

  5. Next, add in the room temperature eggs.

  6. Mix again on medium speed for 1-2 minutes until it’s light and airy.

  7. Scrape the bowl.

  8. Add in the vanilla, salt, baking soda, flour, and chocolate chips.

  9. Next, mix the dough just enough so that it’s combined. Finish by hand to make sure there are no pockets of flour leftover.

  10. Prepare a sheet pan with parchment paper or cooking spray.

  11. I used ice cream scoop to scoop out my dough into equal parts and then place on baking sheet and 3 inches apart.

  12. Sprinkle chopped kit-kat on top for a crunch! You can alsoo add more chocolate chips on top if you like! ( I DID)

  13. Let the dough sit at room temperature for about 30 minutes.

  14. Bake at 350 degrees for 10-15 minutes. Closer to 10 minutes depending on if you let them sit out the whole 30 minutes.

  15. Enjoy these while warm!!
