Creamy Roasted Tomato and Garlic Fettuccine

Ingredients:

  • 1 lb package fettuccine

  • 1 pint grape tomatoes

  • 6 garlic cloves, peeled and whole

  • 2 tablespoons fresh thyme

  • 2 tablespoons fresh oregano

  • Salt and pepper to taste

  • 1/4 cup olive oil

  • 16 oz heavy cream

  • 1 cup shredded Romano

  • 2 shallots diced

  • 2 tablespoons butter

  • 2 tablespoons flour


Directions:

  1. Preheat oven to 425 degrees.

  2. In a small oven safe dish combine tomatoes, garlic, thyme, oregano, olive oil and salt and pepper. Roast in oven for 30 minutes. Mix it up about half way through.

  3. While that’s roasting work on pasta sauce and fettuccine.

  4. Cook pasta according to package directions, drain and set aside.

  5. In large pot over medium heat melt butter and add shallots. Cook for 5 minutes.

  6. Add flour and mix well, cook for another 3 minutes. Slowly add in heavy cream and bring to a simmer.

  7. Once thickened slightly turn heat down and add Romano cheese.

  8. When tomatoes and garlic are finished blend until smooth in blender or food processor then add to sauce.

  9. Add fettuccine to sauce and serve!
