Street Corn Jalapeño Poppers

Ingredients
Poppers
6 oz cream cheese, softened (170 g)
5 large jalapeños, halved and seeds removed
1 cup shredded Mexican blend cheese (100 g)
1 tbsp green onions, chopped
¼ tsp salt
½ tsp garlic powder
½ tsp paprika
6 slices bacon, cooked and divided
Street Corn
1–2 ears corn (about 1 cup / 165 g)
Olive oil
Salt
Paprika
Chipotle Ranch
¼ cup mayonnaise (60 g)
½ cup sour cream (120 g)
1–2 tbsp chipotle peppers in adobo
1 tsp apple cider vinegar
½ tsp garlic powder
½ tsp onion powder
½ tsp dried dill
¼ tsp salt
Instructions
1. Roast the Corn
Clean the corn and drizzle with olive oil, salt, and paprika. Cook in a hot pan or on a grill until lightly charred on all sides. Remove from heat and cut the kernels off the cob.
2. Make the Filling
In a bowl, combine roasted corn, cream cheese, shredded cheese, green onions, salt, garlic powder, paprika, and 3 slices of chopped bacon. Mix until well combined.
3. Prep the Jalapeños
Slice jalapeños in half lengthwise and remove seeds and membranes. Spoon about 1–2 tablespoons of filling into each half.
4. Bake
Preheat oven to 400°F (200°C). Place jalapeños on a baking sheet and bake for 18 minutes.
Switch to broil for 1–2 minutes at the end to get the tops golden and slightly crispy.
5. Make the Chipotle Ranch
Add all chipotle ranch ingredients to a blender or food processor. Blend until smooth and creamy. Taste and adjust spice or salt if needed.
6. Finish & Serve
Remove poppers from the oven and top with remaining chopped bacon. Drizzle with chipotle ranch or serve on the side for dipping.
