Crispy Baked Chicken w/ Spinach and Cheese


This dish is incredible, will have you going back for seconds and wanting at least once a week. Crispy, tangy, buttery delicious chicken. Served well with any side, rice especially. The rice just soaks up all the savory flavors you will be creating when making this effortless meal.




INGREDIENTS:

- 3 chicken breasts ( sliced in half)

- 1 cup plain panko

-1/4 cup flour

-1 egg

-1 tbsp old bay

-1 tbsp paprika

-1 tsbp thyme

-1 tbsp mustard powder

-1 tbsp parsley

- 1 tsp spicy mustard

-1 cup parmesan

-1/2 cup spinach

-1 block feta cheese

- 3 tbsp Pesto

-3 tbsp butter

- 1/4 cup cooking oil


DIRECTIONS

  1. Let's start by dredging the chicken. Get three separate bowls, one for flour, egg and panko. In the flour bowl add 1/2 of all your spices. In egg bowl add spicy mustard and whisk well. In panko bowl add the other half of all your spices and a pinch of salt and pepper.

  2. In a skillet add your cooking oil and let heat on medium heat. In the meant time dredge your chicken. Start by coating with flour, then coat both sides with egg, then coat with panko and set aside until oil is hot.

  3. Cook in oil on both sides for 6-7 minutes. You want the chicken to be mostly cooked through.

  4. Once cooked add all chicken slices to baking pan.

  5. Layer your toppings, start with parmesan, spinach, feta.

  6. In microwave heat butter until melted, then mixed pesto sauce.

  7. Drizzle pesto sauce over your chicken and bake at 350 for 10-15 minutes. You want the spinach to be wilted, but not crispy!

  8. Take out of oven and serve immediately, add more pesto drizzle!
