Crispy Chicken Corn Skillet

Its a mouth full to say but so worth it! It has all the flavors you want in a dinner meal. Plus being in one skillet, it's easy to make.

INGRIDIENTS:
4 Chicken Breasts
1/4 cupFlour
2 eggs
1 tbsp paprika
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
salt and pepper to taste
1 packet chicken boullion
2 cups raw corn (3-4 ears)
1 crown of broccoli ( chopped)
1 yellow onion (diced)
3 cloves garlic (chopped)
1 1/2 cup heavy cream
3 ounces cream cheese
Cotija cheese
Limes for serving
DIRECTIONS:
Start by mixing all your seasonings in a bowl and set aside.
Grab a medium size skillet or cast iron and set to medium heat. Add 1 tbsp oil. While pan is heating prepare your chicken.
In two separate bowls add flour and half of your seasonings that you already mixed. In other bowl add your eggs and beat them. Now dredge the chicken one by one. Coat chicken with egg, then coat with flour and set to a plate. Repeat until all chicken is dredged. Cook for about 5-6 minutes on each side until chicken is browned. Set cooked chicken aside.
In same skillet add 1 more tbsp of cooking oil. Add onion and cook until translucent. Then add corn and cook for about 5 minutes until soft. Add garlic and broccoli. Cook for another 5 minutes.
Slowly add heavy cream and bring to a simmer. Then add cream cheese and turn heat to low. Cook until cream cheese is fully incorporated.
Sprinkle your Cotija cheese on top and serve with lime and a side dish of rice!
