Crispy Chicken Pesto Pizza

In my family we love pizza! Fridays for me are pizza days because it's the end of the week and no one feels like making dishes or cooking!
So, this pizza made with store bought dough is effortless and just what you need.
Of course, you can make your own pizza dough, but this works just as well and there is no effort on your Friday night.
Ingredients:
1 package of pre-maid pizza dough (I get mine at publix or walmart)
1-2 chicken breasts ( 2 you have some leftover)
1 egg (for chicken)
1/2 bread crumbs (for chicken)
4-5 large slices of pepperoni (optional)
2 cups mozzarella cheese, shredded
3 tbsp pesto
2 tbsp marinara
Fresh Basil (optional)
Balsamic Glaze (optional)
Directions:
Preheat oven to 450 degrees. In two separate bowls whisk an egg set aside. In another bowl add your bread crumbs. Slice chicken breast horizontally down the middle. This makes for faster frying and crispier chicken breast. Salt and pepper your chicken.
Place chicken breast in egg, covering all over. Then place chicken breast in bread crumbs, completely covering. Set aside.
Heat skillet on medium-high heat with 3 tbsp of olive oil. Cook chicken on both sides for 5-6 minutes or until chicken is cooked all the way through. Diced chicken when finished.
Flour a clean surface to work your dough. Spread dough out in shape of circle or square. Place on a cooking sheet. Now assemble pizza add pesto, marinara, cheese, chicken, pepperoni if you choose. Bake in oven for 12-15 minutes watching it closely.
Remove and let cool, add fresh basil, balsamic glaze, and serve!
