Crispy Chicken with a Pesto Cream Sauce Fettuccine


The obvious star of the show is the fettuccine with the pesto cream sauce, but let's not let the chicken go un-noticed!

Crispy Chicken with a Pesto Cream Sauce Fettuccine is a dish that promises satisfaction, offering a blend of textures from the crispness of the chicken to the silkiness of the sauce-covered pasta. It's an ideal meal for those seeking the comfort of classic Italian flavors with a delightful crispy twist.

Finishing touches may include a sprinkle of additional Parmesan cheese, a few basil leaves for a fresh burst of color and flavor, and perhaps a light drizzle of extra virgin olive oil, imparting a fruity aroma that complements the pesto beautifully.








Ingredients:

  • 1 lb fettuccine noodles

  • 2 cup heavy cream

  • 1/4 cup pesto

  • 3 cloves garlic, minced

  • 1 shallot, diced

  • 2 tbsp butter

  • 1/2 cup parmesan cheese + extra for topping

  • 2 chicken breast, slice in half length wise ( 4 pieces)

  • 2 eggs

  • 1 cup Italian bread crumbs

  • salt and pepper to taste

Directions:

  1. In a medium size skillet heat 3 tbsp of olive oil on medium heat. Season your chicken breast generously with salt and pepper. In bowl beat two eggs. In another bowl add bread crumbs. Dredge your chicken placing one at a time in egg and then in breadcrumbs until they are completely covered.

  2. Cook chicken breasts on hot skillet for 5-6 minutes each side or until they are cook all the way through and set aside.

  3. Cook pasta according to package directions, drain and set aside.

  4. In a clean skillet, heat to medium heat and add 2 tbsp olive oil and 2 tbsp butter. Add shallots and garlic and cook for 4 minutes. Add heavy cream and bring to a simmer. Cook for another 5 minutes and until as thicken slightly.

  5. Reduce heat to low and add pesto, parmesan and salt and pepper! Give it a taste test before adding to fettuccine.

  6. Slice chicken breasts, mix sauce with fettuccine, top with more parmesan and fresh basil!
