Easy Cheesy Beef Taquitos

If you’re looking for a quick, crowd-pleasing meal, these easy cheesy beef taquitos are it. They’re crispy on the outside, loaded with seasoned beef and melty cheese on the inside, and paired with a creamy avocado lime sauce that takes them to the next level. Perfect for weeknight dinners, snacks, or even game day!
Ingredients
Beef Filling:
1 lb (450g) lean ground beef
¼ yellow onion, finely diced
1 packet taco seasoning
or homemade mix:
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
¼ tsp cumin
Salt & pepper to taste
Splash of water (15–30 ml), if needed
Taquitos:
2 cups (200g) Mexican blend shredded cheese
10–12 small tortillas
Toothpicks
Oil for frying (enough to fill pan ~⅓ inch / 1 cm deep)
Avocado Lime Sauce:
1 small ripe avocado
½ bunch cilantro
1 garlic clove
Juice of 1–2 limes (30–60 ml)
¼ cup (60 ml) mayonnaise
¼ cup (60 ml) sour cream
1 tbsp oil (15 ml)
Salt & pepper to taste
Instructions
1. Make the Beef Filling
In a large skillet over medium heat, cook the ground beef until it’s mostly browned. Add the diced onion and continue cooking until the onions are soft and translucent.
Stir in the taco seasoning (or homemade spice mix) and mix well to coat the beef evenly. If the mixture seems too thick, add a small splash of water to loosen it up. Remove from heat and set aside.
2. Heat the Oil
In a separate pan, add enough oil so it fills about ⅓ inch (1 cm) up the sides. Heat over medium heat until ready for frying.
3. Assemble the Taquitos
Warm the tortillas slightly (microwave or pan) to make them easier to roll.
Add about 2–3 tablespoons of the beef mixture and 2–3 tablespoons of shredded cheese to each tortilla. Roll tightly and secure with a toothpick.
4. Fry Until Crispy
Place the taquitos seam-side down into the hot oil. Fry for 2–3 minutes per side, or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
5. Make the Avocado Lime Sauce
In a blender or food processor, combine avocado, cilantro, garlic, lime juice, mayo, sour cream, and oil. Blend until smooth.
If the sauce is too thick, add a small splash of water until desired consistency is reached. Season with salt and pepper to taste.
Tips for the Best Taquitos
Warm tortillas = easier rolling + less cracking
Don’t overfill or they’ll burst while frying
Keep oil at medium heat so they crisp without burning
Use freshly shredded cheese for better melt
Storage & Reheating
Fridge: Store leftovers in an airtight container for up to 3 days
Reheat: Air fry or bake at 375°F (190°C) until crispy again
Freeze: Assemble (don’t fry), freeze, then fry straight from frozen
