Gorgonzola Mushroom Fettuccine

If you love cheese and you love pasta then this is the recipe for you. You might be thinking, " Well, I dont like gorgonzola cheese". But trust me, you will love this dish. And its even better the next day, that's how you know a pasta recipe is good!

INGREDIENTS:
1 cup baby portabella mushrooms sliced
1 shallot chopped
1/2 yellow onion chopped
1 cup gorgonzola cheese
1/2 cup parmesan cheese
1 cup heavy cream
1lb fettuccine
2 tbsp butter
2 tbsp flour
2 tbsp oil
Salt and Pepper to taste
DIRECTIONS:
Start by heating oil on medium heat in medium sauce pan. Once to temperature add your shallots and onions. Mix and cook until translucent, about 5 minutes. Add sliced mushrooms. Cook another 4 minutes and move to side of pan.
On empty side of pan add your butter. With whisk or fork melt butter, then add flour and mix in butter until dissolved. Incorporate into the mushroom, onion and shallot mixture.
Add heavy cream, gorgonzola, and parmesan. Mix and stir until cheese is fully melted. Add salt and pepper to taste. Turn burner on low.
Add in your cooked fettuccine mix and serve!
