Instant Pot Creamy Beef Stroganoff


This meal can easily be made without an Instant Pot, but I've really been enjoying mine lately! This recipe is perfect for the chilly weather we're expecting here in Florida. I have to admit, I'm excited about the cooler temperatures, though I might change my mind once they arrive!


Anyway, back to the recipe. It’s cozy and comforting, and my kids loved it so much that they asked for it for lunch the next day. If that’s not a win, I don’t know what is!


Ingredients:

  • 1 ½ lbs beef stew meat or sirloin, cut into bite-sized pieces

  • 2 tbsp olive oil

  • 1 medium onion, finely diced

  • 3 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 2 tsp Dijon mustard

  • 2 tsp paprika

  • Salt and pepper, to taste

  • 8 oz wide egg noodles

  • 1 cup sour cream

  • 2 tbsp all-purpose flour

  • Fresh parsley, chopped (optional, for garnish)


Directions for Instant pot:

1.) Set the Instant Pot to “Sauté” mode and heat the olive oil. Add the beef in batches, searing on all sides until browned. Remove the beef and set aside.

2.) Add the onion and mushrooms to the pot. Cook for 4-5 minutes, stirring occasionally, until softened. Stir in the garlic and cook for an additional 1 minute.

3.) Pour in the beef broth and use a wooden spoon to scrape up any browned bits from the bottom of the pot. This adds extra flavor to the dish.

4.) Return the beef to the pot and add the Worcestershire sauce, Dijon mustard, paprika, salt, and pepper. Stir well to combine. Secure the lid, set the valve to “Sealing,” and pressure cook on high for 10 minutes. Once done, allow a natural release for 10 minutes, then carefully release any remaining pressure.

5.) Remove the lid and add the egg noodles to the pot. Stir to submerge them in the liquid. Replace the lid and pressure cook on high for 4 minutes. Perform a quick release once the cooking cycle is complete.


6.) In a small bowl, whisk together the sour cream and flour until smooth. Stir this mixture into the Instant Pot, blending it with the hot liquid to create a creamy sauce. Adjust the seasoning with additional salt and pepper if needed.


7.)Spoon the beef stroganoff into bowls or plates, garnish with freshly chopped parsley, and serve warm. Pair it with a side of crusty bread or a light salad for a complete meal.
