Kale and Sausage Cheese Tortellini


Sausage and kale cheese tortellini is a cozy and indulgent pasta dish that combines the robust flavors of savory sausage with the earthy tones of kale, all enveloped in tender tortellini stuffed with creamy cheese. This dish is often prepared by sautéing crumbled sausage until it's thoroughly cooked and slightly crispy, then adding fresh or wilted kale to the mix, allowing the greens to soften and absorb the flavors of the meat. The sausage and kale mixture is then tossed with boiled cheese tortellini, ensuring each pasta pocket is generously coated with the savory mixture. It can be served with a sprinkle of Parmesan or a dollop of ricotta on top for added richness. This dish balances comfort with a touch of elegance, making it a versatile choice for a weeknight dinner or a casual gathering.

Serves 4-6


Ingredients:

  • 1 lb Italian Sausage links, removed from casing

  • 1/2 yellow onion, diced

  • 3 cloves garlic, minced

  • 3 tbsp Italian seasoning

  • 2 tbsp flour

  • 1 1/2 cups heavy cream

  • 2 oz cream cheese

  • 2 cups chopped kale

  • 1 package precooked cheese tortellini


  1. In a large pot heat 2 tbsp of olive oil. Then add sausage breaking it up into small pieces. Cook sausage for about 10 minutes or until browned all the way through stirring occasionally.

  2. Add onions. Cook for 5 minutes. Then add garlic and Italian seasoning and salt and pepper to taste.

  3. Add flour and mix well until combined. Then slowly add heavy cream and bring to a simmer. Let simmer for 5 minutes, until thickened slightly.

  4. Cook tortellini according to package directions. Before draining tortellini save 1/2 cup of the pasta water.

  5. Add 1/2 cup pasta water to sauce and add cream cheese. Let sauce come to simmer and check for salt and pepper. Add if needed. Once sauce thickens add back tortellini and serve!
