1/2 cup (113 g) butter, softened
3/4 cup (150 g) dark brown sugar
1 teaspoon (5 ml) vanilla extract
1 large egg, room temperature
1 cup (125 g) all-purpose flour
1/2 teaspoon (2 g) baking powder
1/4 teaspoon (1–2 g) salt
5 graham cracker sheets, crumbled
1 cup semi-sweet chocolate divided
1 cup (240 g) marshmallow fluff, divided

1. Prep the Pan
Preheat oven to 350°F (175°C).Line a 9x9-inch pan with parchment paper for easy removal.
2. Make the Cookie Dough
In a large bowl, cream together softened butter and brown sugar using a hand mixer for about 2–3 minutes until light and fluffy.
Add the egg and vanilla extract, mixing until smooth and fully combined.
3. Add Dry Ingredients
Mix in flour, baking powder, and salt until just combined.
Gently fold in the crumbled graham crackers and 1/2 semi-sweet chocolate.
4. Layer the Bars
Press about 2/3 of the cookie dough evenly into the bottom of the prepared pan. Use a buttered spoon or lightly greased hands to help spread it evenly.
Spread the marshmallow fluff over the base layer.
Take the remaining cookie dough and place it on top, gently flattening it to cover most of the marshmallow layer. Then add rest of semi-sweet chocolate and slightly press down.
5. Bake
Bake for 25–30 minutes, or until the top is golden brown and set.
