Sheet Pan Chicken Sandwich

Serves 5
Ingredients:
Chicken
5-6 boneless, skinless chicken thighs
1/2 cup Greek yogurt
1 lemon juiced
2 tbsp olive oil
3 cloves minced garlic
1 tbsp smoked paprika
1 tbsp oregano
1 tsp onion powder
Fresh Naan or store bought works too! (Link for Naan recipe https://baileyycarlislee.wixsite.com/website-1/post/naan-with-feta-dip )
Feta sauce
1/2 cup feta cheese
1/2 lemon juices
1 garlic clove
1/4 tsp smoked paprika
2 tbsp parsley
3 tbsp olive oil
Salt and pepper to taste
Garlic butter spread
4 tbsp butter
1 garlic clove, minced
2 tbsp parsley
Directions:
Preheat oven to 400 degrees. In mixing bowl add all ingredients for chicken thighs and mix well. Bake chicken in oven for 25 minutes.
Place all feta sauce ingredients into food processor and blend until combined. Set aside.
In microwave safe bowl add butter, garlic, and parsley. Heat butter in microwave until melted. About 30 seconds. Set aside.
Warm Naan (if store bought) or cook Naan if prepared fresh.
Time to assemble. Remove chicken from oven and slice. Take one Naan, brush garlic butter, add feta sauce, chicken and fresh salad if you like. Enjoy these!!
