Tomato-Garlic Herb Roasted Bruschetta


Tomato-Garlic Herb Roasted Bruschetta is a delightful appetizer that combines the rich flavors of roasted tomatoes and garlic, embellished with fragrant herbs, atop crispy slices of toasted bread. Imagine perfectly ripe tomatoes and garlic cloves slow-roasted to enhance their natural sweetness and flavor. These roasted beauties are then smashed to unlock even more flavor. With the aromatic herbs like basil, oregano, or thyme, which add a depth of flavor and a refreshing contrast to the warm, sweet tomatoes and mellow garlic.


This mixture is generously spooned over slices of toasted bread that have been topped with freshly sliced mozzarella cheese providing a satisfying crunch and a sturdy base that complements the soft, flavorful topping. The bruschetta may be finished with a drizzle of balsamic glaze or a sprinkling of Parmesan cheese, adding layers of complexity and a tangy or savory note that elevates the dish even further.


Ingredients:

  • 1 loaf french bread

  • 1 lb block fresh mozzarella cheese

  • 1 pint grape tomatoes

  • 5 garlic cloves

  • 4-5 tbsp olive oil

  • 3 sprigs fresh rosemary

  • 3-4 sprigs of fresh thyme

  • 3 tbsp fresh oregano

  • Fresh basil for garnish

  • Balsamic glaze for garnish

  • salt and pepper to taste

Directions:

  1. Preheat oven to 425 degrees. In a deep roasting pan or oven safe casserole dish add tomatoes, garlic, fresh herbs (rosemary, thyme, and oregano), olive oil and salt and pepper. Roast in oven for 25-30 minutes. Remove and set aside when finished.

  2. Lower oven heat to 400 degrees. Thinly slice bread into 1/4 inch - 1/2 inch slices and place on a baking sheet. Bake in oven for 10-12 minutes or until they are just browned on top. You want them to be crispy, but not burnt! Remove from oven and let cool.

  3. Once cooled slightly smash your tomatoes and garlic together releasing all those flavors and juices. Leaving slightly big pieces of tomato.

  4. Slice mozzarella and place 2-3 pieces on top of bread, then adding 3 tbsps of smashed tomatoes and garlic on top, then topping with fresh basil and balsamic glaze!

  5. Serve them up!
